SNAILS BOUBOURISTOI
some salt and then we rinse them with plenty of water. We put in a pan enough salt to cover the bottom, some olive oil, the snails, a small spoonful of thyme and a glass of white wine and we let them slowly braise..
AUBERGINES WITH XINOHONDRO
3 aubergines,we put them all in a casserole and let them cook for 10 minutes.We add 3 pieces of xinohondro,some tomato, salt and pepper and leave them 15 more minutes.
SMALL GOAT WITH ARTICHOKES
okes.We saute the meat  with 2 onions, we add a glass of  white wine and let them  cook for 15 minutes.We add salt, then the artichokes and leave them for 15 more minutes and at the end we add pepper.
BEEF WITH BEANS
  4-5 onions for 5'.  We add a glass of white wine and let it simmer  for 30'.  Add the beans, salt and seasoning for a further 20'.  Pour in the tomato and pepper  for approx 40' until the sauce thickens
RABBIT STIFADO
1 kilo onions sliced, 2  bayleaves, salt, pepper, cinnamon, cloves and  ½ kilo fresh tomatoes chopped. Put the meat it the pan with olive oil on low heat for 5’.  Add the salt and 1 glass of white wine and cook for 15-20’
